Whole Wheat Avocado Wrap

Basically, we just throw a lot of everything onto a tortilla! Here’s the recipe that I use for guacamole, or just add sliced avocado:

2 avocados, mashed but left chunky
2 TB chopped red onion
2 TB chopped green pepper
2 TB chopped tomato
handful of chopped cilantro
1-2 TB fresh lime juice
salt & pepper, to taste

Then we also add onto the tortilla:

chopped tomato
red onion (sauteed in a little olive oil)
black beans
cheese of your choice (we like crumbly Cotija cheese)

 

Pico de Gallo

4 roma tomatoes (some like to take out the seeds)
1 tsp. jalapeno, seeds removed and finely cut
1 tsp. cilantro, finely chopped
1/8 cup lime juice
pinch of salt
1/4 cup red onion, chopped

Mix all ingredients and let mixture sit in the fridge for 30 minutes.
