Let’s face it….. most folks like a good taco. Self included! But, I can’t have the taco shells often so I make taco salad. No, it’s not as exciting as a taco but it will work. I add lots of flavor to boost things up a bit. Here’s what we do:
Shredded romaine lettuce
Sliced avocado (drizzled with fresh lime juice, salt & pepper)z
Boiled egg slices
Sautéed red & green peppers
Sautéed red onion with garlic
Thin chicken breast, sautéed in olive oil, salt & pepper (thinly sliced)
Olive oil or avocado oil, for drizzling over salad
** You could also do lettuce boats rather than chopped romaine. For lettuce boats I like using endive (it’s expensive but worth it). If you want to do lettuce wraps, the best lettuce is butter lettuce (or Boston bibb lettuce).
I make my salad like a layered salad. We have even topped it with dried plantain pieces for crunch. I serve rice and taco shells or tortillas for my boys.
