Weekly Meal Plan for 4-6 to 4-12

Holy cow it’s windy here today! We’ve had 50-70 mph winds associated with a storm that’s blazing across the south and up to us here along the east coast. It’s now leaving off the coast, thankfully! I’ve got to grill out tonight, so be gone already. Hope your weather is better than ours today. 

This week I’m grilling a little more. Hopefully, the weather will cooperate. Here’s this week’s meal plan:

Thursday, 4-6: Grilled Chicken (no bbq sauce), Grilled Sliced Zucchini, Red Onion & Halved Grape Tomatoes with Olive Oil (grill basket…. my favorite) + Fruit

Friday, 4-7: Whole30 Tuna Salad Salad with Apples & Pumpkin Seeds + Baked Sweet Potatoes with Clarified Butter

Saturday, 4-8: Whole 30/Paleo Chicken Piccata, Sautéed Squash, Zucchini & Onion with Olive Oil + Fruit

Sunday, 4-9: Whole 30/Paleo Whole Roasted Lemon Pepper Chicken (drizzle entire chicken with olive oil, salt & lemon pepper then cook according to package directions), Steamed Broccoli with Garlic & Lemon ZestBaked Sweet Potatoes with Clarified Butter

Monday, 4-10: Whole30 Hobo Dinner

Tuesday, 4-11:   Whole30Meatballs with Marinara (I’m using ground pork), Sweet Potato Spirals (spaghetti noodles for my boys)

Wednesday, 4-12: Paleo/Whole 30 Chicken Stir Fry **I’m adding shredded carrots & water chestnuts to my stir fry also** (Cauliflower/Sweet Potato “rice” for me and white rice for my son)
