Weekly Meal Plan for 4-20 to 4-26

Hope you’ve had a great week! I believe the spring weather is finally holding steady here where I live, thankfully. It was a long winter! Now, it’s time for me to plant some herbs and a couple of veggies that we can’t live without. I always plants LOTS of basil (for basil pesto, of course), rosemary, cherry tomatoes, grape tomatoes & cubanelle peppers. That’s it for this year. Can’t wait. Well, we’ve gotten slightly off track from our paleo/whole30 meals but this week we are getting on board again. We feel terrible! So, with that in mind, here’s this week’s meal plan:

Thursday, 4-20: Paleo/Whole30 Chicken Piccata, Sautéed Zucchini, Red Onion & Grape Tomatoes (in olive oil, salt & pepper) + Fruit

Friday, 4-21: Whole30/Paleo One Pan Roasted Garlic Potatoes, Asparagus & Chicken Sausage (Aidelle’s Whole30 compliant sausage…. I use the cajun flavored one) + Fruit

Saturday, 4-22: Sautéed Chicken (Heat olive oil in a skillet. Add salt, pepper, & garlic powder to chicken.  Sear chicken in pan for about 7 minutes on each side, until done), Steamed Broccoli, Sliced Tomato with Olive Oil

Sunday, 4-23: Whole 30/Paleo Whole Roasted Lemon Pepper Chicken (drizzle entire chicken with olive oil, salt & lemon pepper then cook according to package directions), Steamed Green Beans with Lemon ZestBaked Sweet Potato with Clarified Butter (Baked Steak fries for my boys)

Monday, 4-24: Grilled Steak (no sauce), Grilled Sliced Peppers and Red Onion, Steamed Carrots, Mashed Potatoes for my boys

Tuesday, 4-25: Paleo/Whole 30 Chicken Stir Fry **I’m adding shredded carrots & water chestnuts to my stir fry also** (If you are not consuming carbs, you can use cauliflower sweet potato rice… frozen section of grocery……. + White rice for my son)

Wednesday, 4-26: Grilled Chicken (no sauce), Grilled Sliced Squash, Red Onion, & Grape Tomatoes (keep the tomatoes whole or they will cook to “mush”), *Rolls + Pintos for my boys*
