I hope that you are having a most wonderful time of the year with Christmas fast approaching. I also hope that you are taking time to enjoy each day and not getting caught up in the frantic rush of it all. I, for one, do NOT like rushing and chaos so I attempt to avoid that in life at all costs. Sometimes it is unavoidable but if I can control that, I’m going to do so!
This week I’ve incorporated meals that are comforting but healthy choices. Take a look at my meal plan:
Friday, 12-16: Whole 30/Paleo Friendly Chicken Fajita Foil Packets (I use frozen Green Giant cauliflower sweet potato rice instead of white rice with mine. I also use chicken broth instead of water & make my own taco seasoning. No cheese is put into my packet either to make it Whole 30/Paleo Friendly).
Saturday, 12-17: Whole 30/Paleo Friendly Greek Meatballs with Avocado Tzatziki Sauce (this recipe is found in my cookbook “Against All Grain” by Danielle Walker. I’m serving this over spiralized sweet potato “noodles” + Fruit.
Sunday, 12-18: Whole 30 Tuna Patties *(For the tuna I use 2 large cans of olive oil packed tuna, some almond flour to bind, an egg, cilantro, squirt of mustard, garlic powder, parsley flakes, dill, salt & pepper). I saute them in olive oil until crispy or bake them on about 375 degrees for 20-30 minutes, flipping them halfway. If you choose to bake them, place the patties on a parchment lined sheet pan brushed with olive oil or clarified butter.
Monday, 12-19: Whole 30/Paleo Friendly Roasted Lemon Pepper Chicken (drizzle entire chicken with olive oil, salt & lemon pepper then cook according to package directions), Steamed Green Beans with Galic & Lemon + Fruit
Tuesday, 12-20: Whole 30/Paleo Bunless Burgers topped with Sautéed Red Onion & Avocado Slices, Baked Sweet Potatoes with Clarified Butter (burger bun & baked fries for my boys)
Wednesday, 12-21: Crock Pot Potato Soup (not Whole 30/Paleo friendly)
