Weekly Meal Plan for 1-12 to 1-18

The east coast has had winter weather advisories like crazy this past week. Living near the coast, though, we rarely get any snow. 🙁 I’m ready to see snow again! Anyhoo….. I hope you have had decent weather and temperatures that aren’t 20 degrees one day and 70 later in the week. It’s insane!

On another note, I’ve still been wanting hearty Whole 30 crock pot meals this week. Some of these recipes I’ve used lately but they’re so darn good I’m using them again. Here’s this week’s meal plan for me and my family:

Thursday, 1-12: Whole 30 Pork Meatballs with Marinara (for the attached recipe, I’m using ground pork instead of turkey) over Spiralized Sweet Potato (Toasted meatball sub with cheese for my boys)

Friday, 1-13: Chimichurri Chicken Wings with Whole 30 Ranch Dressing + Salad & Fruit

Saturday, 1-14: Paleo/Whole 30 Chili (add beans for my son)

** The paleo chili recipe that I use comes from Juli Bauer’s cookbook “The Paleo Kitchen” page 139.

Sunday, 1-15: Whole Roasted Lemon Pepper Chicken (pat chicken dry and let it sit out for 30 minutes then drizzle entire chicken with olive oil, salt & TONS of lemon pepper then cook according to package directions), Sautéed Onion, Zucchini & Squash in olive oil + Fruit

Monday, 1-16: Crock Pot Tacos Al Pastor served with Green Giant Frozen Cauliflower Sweet Potato “Rice” warmed with olive oil, salt & pepper

Tuesday, 1-17: **UPDATE** These were terrible. I will not be making them again unless I use shredded chicken breast with the rest of the ingredients and put it on top of a salad.  Buffalo Chicken “Sliders” with lettuce, tomato, avocado & onion inside (Buffalo chicken sandwich on ciabatta with cheese for my boys) **I’ve never tried this recipe before but the picture looks awesome! I’ll update on the results later.**

Wednesday, 1-18: Taco Salad + Fruit
