Thai Peanut Chicken Stir-Fry

Peanut Sauce

1/4 cup creamy peanut butter
1/4 cup very hot water
4 tsp seasoned rice wine vinegar (I use garlic flavor or red pepper)
1 TB soy sauce (I use low-sodium)
1 to 1 1/2 TB brown sugar
1/8 tsp crushed red pepper (optional)  *** I like the heat!
chopped peanuts, for topping (optional)

Whisk brown sugar and hot water together. Add peanut butter and the rest of the ingredients. Serve at room temp mixed in with Thai style rice noodles or rice (or as lettuce wraps), veggies that have been sauteed in olive oil (sugar snaps, broccoli, water chestnuts, green beans, peppers and onions), and bite-sized chicken that was sauteed in olive oil (you can use shrimp as well).

Also, you can top this with fresh chopped peanuts for added crunch and flavor.
