Taco Salad with Corn, Avocado & Black Beans…. Meatless Night!

8 cups thinly sliced iceberg lettuce
1 cup chopped tomato
1 cup finely diced red onion
1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
1 (15-ounce) can black beans, rinsed and drained
1 cup yellow or white corn kernels
1 avocado, sliced or cubed
4 cups fat-free baked tortilla chips (about 4 ounces)
Light sour cream, to top the salad & for dressing


Sour Cream
Chili Sauce {you can find this by the ketchup}
Put approximately 2 heaping tablespoons of mayo and 2 heaping tablespoons of sour cream into a bowl.
Put about 1 1/2 tablespoons of Chili Sauce (Pour, stir, taste, and repeat until it tastes like you want it)


To prepare salad, combine lettuce and remaining ingredients except chips in a large bowl. Add dressing; toss well to coat. Serve with chips.
