Whole Grain Spaghetti & Salad

Spaghetti Sauce

1 small onion, chopped
1/2 of a bell pepper, chopped
1 lb. ground beef
1 tsp. Italian seasoning
1 jar marinara sauce (or 2 cans tomato sauce and 1 can diced tomatoes) ** I use Newman’s Own all-natural marinara
1 TB tomato paste (buy the tubes of tomato paste…. they’re convenient to store)
8 oz. cream of mushroom soup (my recipe follows…… DON’T use the canned stuff!!!! PLEASE!)
olive oil
Parmesan cheese, for topping

In a large skillet, heat olive oil and add onion and bell pepper.  When softened, add ground beef and brown.  Drain ground beef and add back to pan.  Add Italian seasoning and tomato paste.  When mixed, add sauce then the cream of mushroom soup. Simmer for about 10-15 minutes as you cook your pasta.  Top spaghetti with parmesan cheese.

When your rolls are done, drizzle them with olive oil and then sprinkle with parmesan cheese.

Homemade Cream of Mushroom Soup Recipe:

In a small pot, melt 2 TB butter on medium heat. Once melted, add about 2-3 TB finely chopped mushrooms and saute for a minute. Add 2 TB flour and stir in until it looks like play dough. Heat it for a minute then WHISK in 1 cup of milk (whatever you have on hand at home). Keep whisking until the flour is incorporated and heat for about 5-8 minutes, until thickened. Add salt & pepper to taste. That’s it!

You can also do this for cream of celery (just replace the above mushrooms with finely diced celery). The rest of the steps are the same.

If you want to make cream of chicken soup, here’s the steps for that:

In a small pot, melt 2 TB butter on medium heat. Once melted, add 2 TB flour and stir in until it looks like play dough. Heat it for a minute then WHISK in 1/2 cup of milk (whatever you have on hand at home) and also whisk in 1/2 cup of chicken broth (I use low-sodium). Now add some shredded chicken breast or canned chicken (about 1/2 cup or so). Keep whisking until the flour is incorporated and heat for about 5-8 minutes, until thickened. Add salt (remember, the chicken broth is already salted), and add pepper to taste. You’re finished!
