There is no set amount of each ingredient. Use as much or as little as you like!
sliced mushrooms (whatever variety you like… we like the darker varieties mixed with lighter ones, baby bella & crimini)
red & green peppers, diced
olive oil (about 2 tsp per 3 cups of veggies)
salt & pepper, to taste
Clean your mushrooms (if they are whole mushrooms) by simply wiping them with a damp paper towel or cloth. Do not run them under water to clean them. If they are not already sliced, slice them in thin slices. Dice your onion, rinse and chop your cilantro, and dice your peppers.
Heat a non-stick skillet on medium-high heat. Add the olive oil and heat. Once heated, add your onions and peppers to the skillet first. Saute until they are soft and beginning to caramelize. Now add your mushrooms and saute for a few minutes until soft. Turn off the heat, add cilantro and salt & pepper. Stir well.
Enjoy as a side dish or as a meatless stuffing for peppers/zucchini.
