I like to use the whole carrots and peel and slice them in little diagonals (about 1/4 inch thick). I steam them for about 4-5 minutes (soft but not mushy). After I steam them, I like to saute them to add some flavor. Here’s where the flavor comes from…. In a pan, heat about 1-2 teaspoons of olive oil. Add some fresh chopped garlic and saute it for a minute. Add the steamed carrots to the pan then add about 1/8 teaspoon of red pepper flakes and salt and pepper to taste.
If you prefer your carrots softer, simply boil them about 2-4 minutes before sauteeing them.
