Nachos

7 cups restaurant-style round corn chips (about 4 oz.) **I’m using whole grain tortilla chips
1 8 ounce package  shredded mexican cheese blend (or see below for bubbly cheese recipe!)
3/4 cup salsa
1/2 cup jalapenos, drained and chopped
1 cup finely chopped red onion
1 cup stemmed and chopped cilantro
1/2 cup black beans, rinsed & drained if canned
sour cream (for topping)
Position a rack in the top shelf of the oven and preheat to broil. Arrange the corn chips on a large, heatproof platter in a single layer to overlap slightly. Sprinkle the cheese over the chips, then dot evenly with the salsa, fresh jalapeno, red onion & black beans.
  1. Broil until the cheese is bubbling, 3 minutes. Remove the platter from the oven, dollop with the sour cream and sprinkle with one-third of the cilantro. Serve the remaining cilantro in small bowls alongside.

Nacho Mama’s Cheese Sauce Recipe (yes, it’s this easy!)

1 cup grated sharp cheddar cheese
1/4 tsp salt
1 cup milk
2 TB flour
2 TB butter

Melt butter in a medium saucepan on low heat. Once butter is melted, add flour and whisk until it looks like a dough. Pour in your milk slowly and whisk constantly until it has thickened (couple minutes or so). Now, add your grated sharp cheddar and the salt. Continue to stir until the cheese has melted completely. Then, continue to whisk more until it is cheesy and thick. There we have it!

For my “tornado drill” version of my salsa here it is:

1 can Rotel tomatoes (in lime juice & with cilantro)
1 can Hunts diced tomatoes (no salt added) *no chemicals added in Hunt’s supposedly
cilantro, about a handful chopped
onion, about 1-2 TB chopped
lime juice, about 2 TB (we like a lot)
salt & pepper

Drain the tomatoes. I use my food processor and put the onion in it and grind it down really fine. Place the tomatoes in it and continue processing until it is the consistency you like. I’m sure a blender will work well also. Add the cilantro, lime juice, and salt & pepper. Keep tasting and adding flavors until it tastes like you want it. Quality checks are important at our house when salsa is being made.
