I made this recipe last week for my family. We all gobbled it up like there was no tomorrow! I highly recommend that you make this one. It’s easy to prepare (especially if you use frozen peppers & onions) and is full of flavor. We’re having it again this week.
16 oz boneless skinless chicken breasts
1 red bell pepper, cut into strips (or use frozen)
1 green or poblano pepper, cut into strips
1 medium onion, cut into strips (or use frozen)
3 tbsp lime juice
1 tsp ground cumin (I didn’t use this….. I just used the Mexican chile powder & it was great!)
1 tsp garlic powder
pinch ancho or Mexican chile powder, to taste (don’t skip this ingredient!!!)
salt and pepper to taste
2 tsp olive oil
8 reduced carb whole wheat flour tortillas (or regular whole wheat flour tortillas are fine)
1/2 cup reduced fat shredded mexican cheese
reduced fat sour cream (optional)
Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin. ** I served this dish with brown rice that was cooked in low-sodium chicken broth.
