Honey BBQ Grilled Chicken, Tuscan White Beans & Cucumber Salad

Honey BBQ Grilled Chicken

Grill chicken until almost done. In last 10-15 minutes of grilling, add honey BBQ sauce (follows).

Mindi’s Honey BBQ sauce (for about 3-4 chicken breasts):

About 1/4 cup ketchup
1 or 2 tsp. mustard (I like stone ground mustard)
1 tsp. brown sugar
1 tsp. roasted red chili paste (on the Asian isle) * I could eat this stuff right out of the jar!!
1 TB honey
Couple dashes of worcestershire sauce

Mix all ingredients then baste onto each side of the chicken.

Tuscan White Beans (recipe courtesy of Food Network):

Cook 2 smashed garlic cloves and 1/4 teaspoon red pepper flakes in olive oil in a large skillet over medium-high heat, 1 minute. Add 1 chopped plum tomato and 1 sprig rosemary and cook 2 minutes. Add 2 cans drained, rinsed cannellini beans and cook, partially smashing the beans with a spoon, 5 minutes. Remove the rosemary. Stir in 1/2 cup water and some chopped parsley; season with salt. Sprinkle with parmesan and broil until golden. Drizzle with olive oil.

Here’s my Cucumber Salad recipe:

For this I basically chop up 2 whole cucumbers, as much red onion as you like (diced in small pieces), 2 whole tomatoes (diced) and a good handful of cilantro (chopped). Then I add about 1-2 tablespoons of Italian dressing or I make my own dressing by combining olive oil, balsamic vinegar, honey and some lemon juice.
