We really like salsa at our house, so this is about 8 cups of salsa! Just a fore-warning.
24 roma tomatoes, diced small
2 limes, juiced (if you’re not using fresh juice, use about 3-6 TB of the “fake” stuff…. use your judgement on how much)
1/2 medium red onion, chopped small
2 cloves garlic, minced
1 cup cilantro, chopped
1/4 to 1/2 cup jalapeno, chopped (optional….. make it however spicy you want)
Chop tomatoes and add to a large storage bowl. Remember, this recipe makes 8 cups so be sure your container is large enough. Add all other ingredients and mix well. This stores well in the fridge for about 3-4 days.
