“Hobo” Dinner (Paleo/Whole 30 Friendly)

I’m not quite sure why this meal is called a hobo dinner. I feel bad calling it that! All I know is that I was brought up eating it and always liked it. I still make it after all these years of consuming it. It is an affordable, quick & easy meal to have…. maybe that’s why it’s called that (cheap meal on a tight budget).

(Serves 4)

1 lb. ground beef, cut into quarters and formed into patties
4 cups carrots, cut into 1 inch pieces
1 large red onion, sliced
2 medium sweet potatoes, cut into 1 inch cubes (or white potatoes)
Salt & pepper, to taste
2 TB clarified butter  (Milk solids removed from melted butter)
4 approximate 12 X 12 pieces of foil

Preheat oven to 375 degrees.

Place 4 foil pieces down on your counter (leave room for you to chop your veggies).

Chop carrots, onion and potatoes and divide them up between the 4 pieces of foil. Add salt & pepper.

Place your ground beef patties on top of the veggies. Add salt and pepper.

Drizzle clarified butter on all 4 then fold and seal the foil packets. You want them to be folded well so that no butter or flavor escapes from the packet!

Place all 4 packets on a sheet pan (in case they do drip a little).

Cook for 45 minutes to an hour, until beef is cooked through and veggies are tender.
