Healthified Tilapia Po’ Boy….. nothing wimpy about this!

Healthified Tilapia Po’ Boy (Serves 4)

Four 6 oz. tilapia fillets
2 cups shredded lettuce
1/2 cup tartar sauce (store-bought or use homemade recipe below)
1-2 TB olive oil
salt & pepper, to taste
4 sandwich rolls, split and toasted (I like crusty/chewy baby French baguettes or loaves)
2 tomatoes, thinly sliced
Hot sauce (optional)

In a large bowl, combine the lettuce and tartar sauce.

Season the fillets with salt and pepper. In a large skillet, heat the oil over medium-high heat. Add fillets to skillet and cook, turning once, until golden-brown and not transparent any longer (about 7 minutes).

Top each roll bottom with lettuce slaw, then tomato slices, fillets and a roll top. Serve with hot sauce (optional).

This recipe is my take on Rachael Ray’s Catfish Po Boy (much healthier).

 

Homemade Tartar Sauce (makes 1 cup)

1 cup reduced-fat mayonnaise
1 tsp. lemon juice
1 tsp. hot sauce
1 tsp. capers (or dill pickle relish)
1 TB chopped fresh parsley

Combine all ingredients & mix well. Adjust ingredients to your heat preferences.
