Grilled BBQ Chicken Kabobs with Peppers & Onion and Scalloped Potatoes on the Side

This is our last attempt of grilling before the weather gets colder (although it doesn’t get too cold here in eastern NC). This week at our local grocery, chicken kabobs are on sale and pre-made in the meat department. But if you are having to make them yourself, cut your chicken into nice 1 inch chunks or so. Also, if you are using wooden skewers, soak them in water for about 30 minutes prior to grilling so they won’t burn. We use the metal skewers that we can wash and re-use.

Thread your kabobs with chicken, and chunks of peppers and onion. Grill for about 15-20 minutes total, flipping occasionally. Baste with BBQ sauce the last 10 minutes of grilling. My quick BBQ sauce is listed below.

My “Tornado Drill Version” Honey BBQ sauce

About 1/4 cup ketchup
1 or 2 tsp. mustard (I like stone ground mustard)
1 tsp. brown sugar
1 tsp. roasted red chili paste (on the Asian isle) * I could eat this stuff right out of the jar!!
1 TB honey

Mix all ingredients well (If you have time…. heat ingredients over medium heat and simmer for about 10 minutes. If you don’t have time, just break up the brown sugar with a fork really well then baste.)

Scalloped Potatoes

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

In a small sauce pan, melt butter and blend in flour.
Let sit for a minute.
Add all of cold milk, stirring with a whisk.
Season with salt and cayenne.
Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
Reduce heat and stir in cheese.
Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
Pour half of cheese sauce over potatoes.
Repeat with second layer of potatoes and cheese sauce.
Sprinkle the remaining cheese on top.
Top with some paprika for color.
Bake uncovered for about 1 hour at 350°F.
