Do you ever want something a little extra on your sandwich? I know I do. And sometimes a simple mayo or mustard just isn’t going to do the trick. If you feel the same way, try this aioli recipe. An aioli is simply a mayonnaise-based sauce that you can add to just about any sandwich. You can leave out the roasted red peppers, but they give the sauce a little something extra. There are many varieties of this sauce. Google “aioli” and see what you find that suits you. Until then, here’s one to get you started on the aioli road trip.
2 garlic cloves
1/2 cup roasted red bell peppers, drained, patted dry
1/3 cup mayonnaise (I use light)
2 TB olive oil
Salt & pepper, to taste
Finely chop the garlic (in a food processor if you have one, if not, try it in a blender). Add the peppers and blend until almost smooth. Blend in the mayo. With the machine running, blend in the oil. Season the aioli, to taste, with salt and pepper. Transfer the aioli to a small bowl or squeeze bottle (like a mustard or ketchup bottle). This can be made 2 days ahead. Cover & refrigerate.
