Deviled Eggs with Paleo Mayo

This recipe is for 5 boiled eggs in total.

5 large eggs
1/4 cup paleo mayo
1
 or 2 tsp. dijon mustard (to your liking)
salt & pepper, to taste
2 tsp. chopped jalapeno (optional)
paprika, for dusting

Place the eggs in a small pot and cover with cold water. Turn your stove eye on high and set your timer for 18 minutes. After 18 minutes, run cold water over the boiled eggs and peel, slice in half, place the egg whites onto an egg plate and place the yolks in a separate dish.

Mash the yolks with a fork until in very small pieces. Add the mayo, mustard, salt & pepper (and chopped jalapeño, if using). Stir well.

Place a small amount of this mixture into each egg half.

I like to sprinkle paprika over my deviled eggs before serving.
