Quick Cranberry Sauce:
1 can Ocean Spray cranberry sauce (with WHOLE cranberries)
1 medium orange, zested (use about 1 TB of the zest & about 1-2 TB of the juice)
1 TB honey (or more if you like it sweeter)
Warm the sauce in a small pot. Wash and dry the orange. Add orange juice and zest as well as the honey. Stir well and heat for about 10 minutes. Serve warm.
1 small navel orange
12 oz. bag fresh or frozen cranberries
1 Bartlett pear, cored and cut into large chunks
1/2 cup light brown sugar
Pinch kosher salt
3 TB pecans, toasted and coarsely chopped
Wash and dry the orange. Cut the orange into small wedges, including the peel, and put in a food processor. Add the cranberries, pear, sugar, and salt. Pulse until coarsely chopped. Transfer to a bowl, cover, and refrigerate for at least 2 hours and up to 2 days. Just before serving, stir in the pecans.
Use leftovers the next day for breakfast waffles or pancakes by adding 1 TB butter, t tsp. lemon juice, 1/8 tsp. nutmeg, and 1 cup apple cider (or less).
