1 lb. lean ground beef
1 envelope chili-o seasoning
4 cups of homemade beans made from dry beans (or use 2-3 cans of pintos)
1 can chopped tomatoes, with juice
1 can beef broth
1/2 tsp. worcestershire sauce
1/4 tsp. sugar
1 medium onion, diced
tomato paste, about 1 TB
salt & pepper, to taste
In a large stock pot, brown ground beef and drain. While beef is draining, saute the onion then add beef back into the pot. Add chili-o mix and tomato paste and blend well. Add beef broth and simmer for a few minutes. Add tomatoes, beans, and remaining ingredients. Simmer 30-45 minutes.
My Favorite Cornbread Recipe
1 cup all-purpose flour
3/4 cup cornmeal (I use yellow)
3-4 TB sugar (we like it sweet!)
2 1/2 tsp. baking powder
3/4 tsp. salt
1 TB butter
2 eggs, beaten
1 cup milk
1/4 cup cooking oil or melted butter
Preheat oven to 400 degrees. In a medium bowl, stir flour, cornmeal, sugar, baking powder, and salt; set aside.
Add the 1 TB butter to a 10-inch cast-iron skillet or a 9 X 1 1/2 inch round baking pan or 8 X 8 X 2 inch square baking pan. Place in the preheated oven about 3 minutes or until the butter melts. Remove the pan from the oven; swirl butter in pan to coat bottom and sides of pan.
In a small bowl, combine eggs, milk, and oil (or butter). Add egg mixture all at once to the flour mixture. Stir just until moistened (don’t over mix it). Pour batter into the hot skillet or pan. Bake for 15-20 minutes or until a toothpick or knife inserted near the center comes out clean. Cut into wedges or squares & serve warm.
