1 head broccoli, cut into florets
1 clove garlic, minced
1 lemon, zested
1 TB olive oil
Salt & pepper, to taste
Boil broccoli to desired tenderness (I like about 4 minutes to keep some crispness). Immediately place the broccoli in a bowl of ice water to stop the cooking process and keep it nice and green. Add garlic & lemon zest in some olive oil in the same pan on medium heat (only saute for a minute or the garlic will turn bitter). Drain broccoli and add it back to the pan. Add salt and pepper and even the juice from the lemon that you tested if you want more lemon flavor like I do.
*If you’d like some heat, you can add a pinch of red pepper flakes as well.
