(This makes about an 8 oz. jar of jam)
3 cups frozen blueberries
2/3 cup honey
juice of 1 lemon
1/4 tsp. finely grated lemon zest
Put a small saucepan over medium heat.
Add frozen berries and cook until they are heated up and juice begins to come out of the berries.
Add honey and lemon juice.
Mix well and cook for about 5-7 minutes then reduce heat and cook another 5-7 minutes until berries have fully exploded and everything has broken down into a well combined mixture.
The longer you let the jam sit on low, the more it will thicken.
Once it’s to the consistency you want, place the cooled mixture into a mason jar or other sealed container in your fridge. The jam will continue to thicken and the flavors will begin to marry in the fridge.
