Baked Spaghetti Squash

This stuff is fabulous! If you’ve never tried it, maybe now is the time if you can find some that look good.

1 spaghetti squash, cut in half and seeded (be careful cutting these suckers in half)
olive oil, for drizzling
salt & pepper, to taste

Preheat oven to 375 degrees.

Drizzle the cut side of the squash with olive oil, salt & pepper. Turn them cut side down onto a sheet tray. Poke holes in the outer rind with a knife.

Cover loosely with foil and bake for and hour and a half (or one hour if you want them less soft).

Take a fork and rake through the squash to form the “spaghetti” strands.

Serve with marinara or meat sauce.
