Grilled Panini Burger
Grill your burgers however you like them. Place burger on bread (I’m using deli sliced sourdough). Top with smoked cheddar cheese and any other toppings you want (maybe save the lettuce for last!). I’m adding red onion & tomatoes.
Heat a griddle or non-stick skillet on medium heat. Drizzle some olive oil in the pan or griddle. Place your sandwich on pan. If you don’t have a panini press (or a panini machine….. that would be nice), simply press the sandwich down with the weight of a heavy skillet and cook each side until the bread is nice and toasty and your cheese is melted. You can also cover a brick with foil and use as a panini press. But…. who has those just lying around on panini night?!
10 Minute Lettuce Wedges

Salad dressings of your choice
Blue Cheese crumbles
Cut your lettuce into small wedges and your cooked bacon into small pieces. Next take your tomatoes and stick them through the middle of the toothpick. Stick your toothpick through the wedges to keep them sturdy before you begin putting your toppings on. Put your dressing on each wedge followed by bacon and blue cheese crumbles. The great thing about these wedges is you can customize each one.
